It's funny, but I keep saying 'What will you think up next?' I guess that works too. When I entered the 2 ways of saying this into an Internet search engine I had 1/55 hits with 'up' and the rest with 'of'.

It's a little more formal to say "of" instead of "up." You can say this for any person ("What will she think up next?") or in general when a new discovery occurs ("What will they think of next?").
