"guy" is commonly used to refer to a man, while "guys" is often used to refer to a group of men or a mixed gender group (less commonly, a group of women).
Ex. "That guy in the blue shirt is drunk." (this will almost always refer to a male)
Ex. "What are you guys doing tonight?" (this could refer to a group of men, a man and a woman, or even a group of women in some cases).

Ma'am - is only to a female figure of authority like a teacher, police officer even a mother. It is like a sign of respect for older women or women with authority.
You wouldn't say ma'am to your female friend but you would say it to Michelle Obama :)

Dude can be used for a guy or a girl but more often for a guy.
Ex. "Hey dude! What's up?"
Bro is short for brother but you can say it in reference to any guy, even if he is not your brother.
Ex. "How's it going bro?"
Sometimes people say chick instead of girl, but it's a little rude.
Ex. "Dude did you see that chick over there?"
Adding a "my" before man or dude is also common.
Ex. "What's up my dude?"
Lady is another way of saying woman, but it can seem rude sometimes too.
Rude Ex. "Hey lady!"
Polite Ex. "You have grown up to be a fine young lady."
And if someone says "homeboy", "homegirl", or "homeskillet" it's the same as dude, but it's a joke because no one says any of those unironically.
