Traditional Cornish Crab Pasties
Ingredients: (makes four)

250g/80z self-raising flour
250g/8oz butter
250g/8oz fresh white crab meat
4 generous dessert-spoons of clotted cream
1 leek
1 dessert-spoon honey
1 large egg
a little milk
a pinch of grated nutmeg
salt and pepper


heat oven to approx 400/gas 6

rub 6oz of the butter into the flour, add a pinch of salt. Beat egg and mix into the butter and flour. Add enough water to make the mixture into a firm ball. Divide into four equal pieces, roll out thinly. Dampen the edge of each round piece of pastry with a little milk.
Melt the remaining butter in a frying pan, thinly slice the leek and put into the melted butter. Stir in the honey and turn the heat down very low. Allow the leek to soften, and turn light golden brown. Divide the cooked leek equally between the four pastry rounds. Divide the white crab meat equally between the four rounds and place on top of the leek. Put one dessert spoon of clotted cream on top of the leek/crab in each pastry round, top with pepper, a very little salt, and a small grating of nutmeg. Pull the edges of each pastry round together at one side and crimp together to form 'pasty' shape - it should be completely sealed. Brush with milk and place in oven until the pastry is golden brown. Serve immediately with strong green salad such as rocket, water-cress etc.

Hi Sylvain, I am from the US...I love learning about the French language and also about cooking. I also love to bake! I have some wonderful recipes from my grandmother for cookies. I also have a really great recipe for miniature dark chocolate pies. They are always the hit at every party we have!
here is the recipe for the chocolate pies:

part 1: dough (this will make 48 pies) - you will need small miniature pie pans for this. A 24 count pan works well.

1 (8 ounce) block of cream cheese
2 sticks of butter
2 1/2 cups of flour
pinch of salt
mix dough lightly two knives. (make dough crumbly). Then roll into two balls. cover and refrigerate for about two-four hours.

Take chilled dough and break into small pieces, roll into small balls, then place into pie pans. press dough into pans with fingertips and make into little pie shells. (it's not that hard once you get the idea, you can also press them first with a small pistle or wooden handle).

Prepare pie filling: need a double boiler or I just use a large pot of hot water on stove top, then smaller pot to place filling in.
Preheat oven to 325 degrees.

you will need to put in small pot:
1 (12 ounce) bag semi sweet chocolate chips (Nestle-is what I use)
2/3 cup of sugar
2 tablespoons of butter
4 tablespoons of milk
2 eggs (beaten), put in last
1 tsp pure almond oil and 1/2 tsp, pure vanilla (these are the secret ingredients!)
(nuts will go on top of pies right before baking)
1/2 cup chopped pecans or walnuts (finely chopped)

Heat chocolate mixture over heated water until melted and mixed well. Chocolate will be somewhat thin, thinner than icing.

pour 1 tablespoon mixture into pie cups (at least 3/4 full).
add chopped nuts on top (just a little for each, not alot!)

Place pies in oven for approx. 18-20 minutes. (Check at 18 to see if puffy and done). Take out when puffy and slightly hard on top.

Voila!...Best chocolate pies around!

Here is also a great chocolate chip cookie recipe!

You will need two bowls. Preheat oven to 370 degrees
first bowl:
2 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt

second bowl:
2 eggs
3/4 cup white sugar
3/4 cup brown sugar
2 sticks (very good butter) -best butter very important for taste
mix these ingredients thoroughly-use a mixer...it's faster
add 1 teaspoon vanilla
1 teaspoon almond oil (my grandmother swears by this!)

Add in flour mixture to egg/sugar/butter mixture, slowly.
When all mixed add in 1 (12 ounce) bag of semi sweet chocolate chips
(you can add walnuts or pecans if you want. I do not)

drop by teaspoon fulls onto cookie sheet. Bake 8-10 minutes (light golden brown)
You will be very happy with these too!

Black Sesame Ice Cream
Hi

I've recently tried to make black sesame ice-cream. Compared to what I had at a Japanese restaurant last night, it wasn't up to scratch because mine resembled more of a weis bar, solid frozen mixture instead of it being soft and creamy.

Any one have special insight into ice cream making or gelato making? I'm still refining my current black sesame ice cream making but I'm happy to share the receipe. Just pop me an email if you're keen.

GREEN CHILAQUILES

(Chilaquiles Verdes)


Ingredients:
12 tortillas
12 green tomatoes
2 garlic, cloves
1 sprig of epazote
serrano chili as desired
oil
salt
1/2 cup of sour cream
1/2 cup of queso fresco (fresh cheese)
1 onion, sliced

Procedure:
Cut the tortillas in small pieces and fry them in oil until brown. Drain off the oil.
Liquify the tomatoes together with the chili and garlic. Fry them until they season. Add salt and a sprig of epazote. Add three cups of water.

When the salsa boils, add the tortillas. Leave them only a minute so they do not soften too much. Remove from heat.

Serve with queso fresco crumbled on top and sour cream as desired.

hello, i am Dutch, i speak English very well. I can try to help you, but i know very little of Turkish. I do like Turkish food though. I have been looking for a good recipe for pancakes with spinach and cheese. I cannot find it anywhere. Do you have that sort of recipe? Thank you in advance, and tell me how i could help you. Do you want any Dutch recipes??? (I think they are a little boring compared to Turkish food :() Greetings from Holland!

I love Thai Food. Here in Amsterdam i can get all the ingredients. I would love to have an original Thai recipe. For example with noodles, vegetables and prawns?
If you want Dutch recipes i can send you. But maybe this is a very strange taste for you that you will not apreciate. We eat a lot of boiled patatoes, with vegetables and meat. We have some interesting soups. Let me know!! Greetings from Holland!
