Hi Alice,
If you arrive in Vietnam, you can interned in English centers or enjoy some international companies in large cities. You also should contact with the office that you intend to do in advance to make everything easy when you come.
Furthermore, there are internship organizations that may support you. Eg, Aiesec Vietnam..

I'm a part-time tour guide of Viet Nam. if you need any advice when you come to Viet nam, please feel free to contact me.
You can go to the web of some university in Viet nam to apply for the intership. You will teach from monday to friday, and travel at the weekend. the fee for plane, homestay... the university will pay for you.
I'm living in the south of Vietnam, so i can help you a little if you apply to work for Can Tho university.
