I doubt that your diet is good.
(Yo) dudo que tu dieta sea buena.
I want to have a diet that is better.
(Yo)quiero tener una dieta que sea mejor.
El subjuntivo lo usas para expresar deseos, hipótesis no reales. La dieta es 3ª persona, por tanto usas 'sea'.
Un ejemplo de conjugación para todas las personas, sería:
Yo dudo que yo sea buena
Yo dudo que tú seas buena
Yo dudo que la dieta sea buena
Yo dudo que ella sea buena
Yo dudo que nosotros seamos buenas
Yo dudo que vosotras seáis buenas
Yo dudo que yo ellas sean buenas

Help with the Subjunctive
Hi, I am a native English speaker trying to learn Spanish. I understand when to use the subjunctive, but I don't know the grammar rules relating to sentence structure. For example, can somebody tell me how to properly say the following sentences in Spanish:
I doubt that your diet is good
and
I want to have a diet that is better.
